Northeast Family Farms Ribeye

stowe vt restaurantsThe best item on the menu at Edson Hill is the tender, succulent ribeye purchased from Northeast Family Farms, a local company that specializes in the sales of locally-sourced beef, lamb, poultry, bison, and pork from across New England. The perfectly-cooked ribeye is paired with candied pearl onions, king oyster mushrooms, black garlic butter, and blue cheese whipped potatoes.

Olive Oil Poached Salmon

For unknown reasons, poaching is an often overlooked method of cooking salmon, yet it’s the best way to make tender, moist, and flavorful fish. The key is the sauce which builds into the salmon – chef Bissell uses world-class olive oil. The poached salmon shares the plate with charred cauliflower, roasted red pepper jam, sunchoke purée, and turmeric crème fraîche.

Edson Hill Burger

You might think we’re crazy for listing a burger ahead of duck breast and halibut, but it’s that good! This juicy, grass-fed beef burger is served on a house-made brioche bun and topped with Cabot clothbound cheddar, roasted tomato jam, grilled onion, and bacon. You won’t look at cheeseburgers the same way after finishing this game-changer.

Seared Duck Breast

Chef Bissell has perfected his seared duck breast recipe, as many of our past guests now know. Each slice of duck is heavenly, thanks to the corn purée, blood orange jus, and farro. This delicious meal also features a house favorite: roasted kale. After dinner, sip on a craft beer from two of the best breweries in Stowe VT: The Alchemist and Idletyme.

Pan Seared Halibut

Our Atlantic halibut is usually caught off the shore of Massachusetts. This lean flatfish is pan-seared and placed on a bed of black forbidden rice, sliced carrots, braised fennel, and pomegranate beurre rouge (as pictured above). The pan-seared halibut is one of the many reasons we’re often considered one of the five best restaurants in Stowe VT.
