Edson Hill
Make a Dinner Reservation
Seasonal fine dining in Stowe, Vermont — reservations required.
![]()
Edson Hill’s dining experience — offered in both our Dining Room and Fireside Tavern — is intended to be relaxed, thoughtful, and unhurried casual fine dining. We welcome both overnight guests and the public for dinner, and recommend making reservations in advance, especially during the winter ski season and fall foliage. Led by Executive Chef Matt Hiebsch, our kitchen highlights New England farms and regional purveyors through seasonal menus that reflect a modern approach to classic flavors.

For special occasions or larger parties, we encourage guests to contact us directly prior to booking.
Our dining experience is curated for guests who enjoy a relaxed, adult-oriented atmosphere. While children are welcome, we recommend reservations for those who can enjoy an unhurried dinner service. Please note that dinner seating times are designed to allow for a full dining experience. Late arrivals may impact the length of service available.
