Meet Executive Chef Matt Hiebsch

A graduate of the prestigious Culinary Institute of America, Chef Matt brings more than 20 years of experience cooking in some of the Northeast’s most celebrated kitchens. His early career included an externship at the iconic River Café in Brooklyn, followed by leadership roles at Lacroix at the Rittenhouse Hotel and Garces Restaurant Group in Philadelphia. He later served as Chef de Cuisine at the Ritz-Carlton Philadelphia, where he oversaw all kitchen operations at a Forbes-rated restaurant inside a five-star property.

In 2018, Matt relocated to Vermont, embracing the state’s farm-rich culture and tight-knit culinary community. He founded Kitsune, a boutique catering company and acclaimed pop-up restaurant in Stowe, where he built a reputation for creative, ingredient-forward menus that reflected the seasons of New England. His move to Edson Hill marks a return to luxury hospitality – and a chance to craft a dining program that is as memorable and inspiring as the setting itself.

By building strong relationships with local farms and purveyors, he brings the freshest produce, meats, and artisan goods directly to the table. His menus highlight seasonality, sustainability, and creativity, ensuring each dish feels both rooted in Vermont and globally inspired.

“I’ve always believed that the best meals tell a story,” says Chef Matt. “Here at Edson Hill, I want guests to experience the beauty of Vermont not just through the view outside their window, but through every bite they take.”
